Spinach Egg Lunch Wrap

I am always looking for quick and easy lunch ideas for both myself and my clients. I find lunch to be the hardest meal of the day when it comes to creativity and taste but I just discovered a product that has stepped up my wrap game. I’ve been using these tortillas for the past few days for spinach egg wraps, but I’ll definitely also be using them for chicken caesar wraps and quesadillas too!  

What you'll need:

•1 Herb & Garlic tortilla from Silver Hills Bakery (found in the freezer section of the health food section at your local grocery store )

•2 eggs  

•2 tbsp chopped onions  

•Handful of baby spinach  

•2 tbsp shredded cheese (optional)  

•1 tbsp olive oil  

•Salt & pepper to taste  

What you'll need to do:

1. Heat oil in a large frying pan.

2. Sautée onions, spinach and eggs in a frying pan and season with salt and pepper.

3. Transfer onto defrosted wrap and top with cheese.

4. Wrap tightly and eat immediately.

I had mine with a side of fresh berries and it was the perfect lunch!
