No Bake Energy Bites

These energy bites have been floating around the internet and blogs for years now and there’s a good reason why! They take all of 5 minutes to whip up and they’re great to pop out of the fridge for a quick snack. I love that the maple syrup and chocolate is balanced with flax and chia seeds as well as healthy fats. Give these a try!

What you'll need:
•1 cup old fashioned rolled oats
•1/2 cup natural peanut butter
•1/2 cup ground flaxseed
•2/3 cup unsweetened shredded coconut (optional)
•1/3 cup honey or maple syrup
•1 tbsp chia seeds
•1/4 cup mini chocolate chips
•1 tsp vanilla extract
What you'll need to do:
1. Stir all ingredients together in a large bowl and refrigerate for an hour.
2. Remove from fridge and roll into about 12 balls and place into a storage container.
3. Store energy bites in fridge for about a week or in the freezer for a month.
