Yes, I know it's only March and I'm a little early this year for berry season. BUT, this recipe is so easy it doesn’t even require exact ingredients. And BOY DOES IT BEAT THE STORE BOUGHT STUFF! Most jams are loaded with unnecessary amounts of processed sugar and fillers which is why a homemade jam is so much healthier for you.
You can make this jam with any sort of fresh or frozen berries, but just be sure to increase the cooking time for frozen berries to evaporate the extra liquid that you'll see in the saucepan.
What you'll need:
•2-3 cups frozen wild blueberries
•A good drizzle of honey or maple syrup
•1-2 tbsp chia seeds
What you'll need to do:
1. Add the berries to a small saucepan and stir until they begin to soften and breakdown.
2. Add in the honey and then the chia seeds.
3. Cook for about 10-15 minutes until the berries are almost completely broken down and the liquid has evaporated. The jam should take on a gelatine-like consistency.
4. Let cool and store in fridge for up to a week or in the freezer for a couple of months.
