Healthy Black Bean Avocado Brownies

If any dessert should receive a standing ovation and encore it's these black bean avocado brownies. They are perfectly gooey, chocolate chip filled and are definitely a crowd pleaser! The entire recipe is made in a food processor so clean up is easy.



I dare you to make these and NOT eat the entire pan! ⁣ ⁣ What you'll need:

• 1 (15oz) can of black beans, drained and rinsed⁣ • 3 large eggs*⁣ • 1/2 of a ripe avocado⁣ • 1 tbsp melted coconut oil⁣ • 1/2 cup + 1 tbsp unsweetened cocoa powder⁣ • 1/2 tsp baking powder⁣ • 1/4 tsp baking soda⁣ • 1/4 tsp salt⁣ • 1 tsp pure vanilla extract⁣ • 2/3 cup coconut sugar or brown sugar⁣ • 1/3 cup dark chocolate chips (and a couple tablespoons more for topping)⁣ ⁣ What you'll need to do:

⁣ 1. Preheat oven to 350 F and grease an 8x8 inch baking pan.⁣ 2. Place ALL ingredients (except chocolate chips) in a food processor and blend until batter is smooth.⁣ 3. Add 1/3 cup of chocolate chips and fold into batter.⁣ 4. Pour batter into prepared pan and sprinkle remaining chocolate chips on top. You can also swirl in nut butter if you wish!⁣ 5. Bake for 25-30 minutes or until knife inserted in centre comes out clean. Cool completely before cutting into 12 squares.

*To make vegan, substitute eggs with flax eggs and use dairy free chocolate chips.⁣ ⁣ If you haven’t made these before, you’re in for a treat and you can thank me later!
