If any dessert should receive a standing ovation and encore it's these black bean avocado brownies. They are perfectly gooey, chocolate chip filled and are definitely a crowd pleaser! The entire recipe is made in a food processor so clean up is easy.
I dare you to make these and NOT eat the entire pan! What you'll need:
• 1 (15oz) can of black beans, drained and rinsed • 3 large eggs* • 1/2 of a ripe avocado • 1 tbsp melted coconut oil • 1/2 cup + 1 tbsp unsweetened cocoa powder • 1/2 tsp baking powder • 1/4 tsp baking soda • 1/4 tsp salt • 1 tsp pure vanilla extract • 2/3 cup coconut sugar or brown sugar • 1/3 cup dark chocolate chips (and a couple tablespoons more for topping) What you'll need to do:
1. Preheat oven to 350 F and grease an 8x8 inch baking pan. 2. Place ALL ingredients (except chocolate chips) in a food processor and blend until batter is smooth. 3. Add 1/3 cup of chocolate chips and fold into batter. 4. Pour batter into prepared pan and sprinkle remaining chocolate chips on top. You can also swirl in nut butter if you wish! 5. Bake for 25-30 minutes or until knife inserted in centre comes out clean. Cool completely before cutting into 12 squares.
*To make vegan, substitute eggs with flax eggs and use dairy free chocolate chips. If you haven’t made these before, you’re in for a treat and you can thank me later!
