In my books, oatmeal cookies should be easy, chewy and have minimal ingredients. Just like grandma would make ‘em! Except this time we added coconut flakes to spice things up a little bit. Check your pantry for these ingredients and whip up my new favourite oatmeal cookies!
What you'll need:
•2 cups oats
•1 cup almond flour
•1/2 tsp baking soda
•2 tsp cinnamon
•1/2 tsp salt
•1/3 cup unsweetened coconut flakes
•1/3 cup coconut oil (melted)
•1/3 cup pure maple syrup
•2 eggs (whisked)
What you'll need to do:
1. Preheat oven to 350 F and line a large baking sheet with parchment paper.
2. Combine all ingredients in a large bowl and mix to combine.
3. Use a scooper or a tablespoon to roll dough into balls and flatten on baking sheet.
4. Bake for 12 minutes until slightly golden and allow cookies to cool before devouring!
