Chocolate Chunk Coconut Tahini Cookies

While studying Holistic Nutrition, my eyes were opened to the potential of tahini as a baking ingredient. If you've never tried tahini before, it's a condiment made from toasted ground hulled sesame seeds. I would have NEVER THOUGHT to add it to chocolate chip cookies, but let me tell you, I'm never going back. I solemnly swear I will never make wheat flour chocolate chip cookies again after tasting these babies. Even the hubby couldn’t believe these were homemade. They taste buttery and light and the chunks of chocolate hit the spot!

What you'll need:

•1 cup almond flour⁣

•1/4 cup pure maple syrup⁣

•3/4 cup tahini⁣

•2 tbsp melted coconut oil⁣

•1 egg⁣

•1 tsp baking powder⁣

•1 tsp vanilla extract⁣

•1/2 tsp cinnamon⁣

•1/4 cup chocolate chunks⁣

•1/4 cup unsweetened shredded coconut⁣

•1/4 tsp salt⁣

What you'll need to do:

1. Combine all ingredients in a bowl and refrigerate for 30 minutes. This is necessary so the cookies stay formed when they are baking.⁣

2. Preheat oven to 350 F and line a baking sheet with parchment paper or a silicone mat.⁣

3. Once the batter is cold, form into 12 balls (I used a cookie scoop) and bake for 12 minutes until the edges of the cookies are golden.⁣
