Chocolate Chip Banana Freezer Muffins

Banana bread is a fan favourite, but the entire loaf often gets eaten in one day in my house. I can’t keep it on the counter long enough so I turned my original healthy banana bread recipe into freezer friendly muffins!


Pop these babies out of the freezer and into the toaster for one minute for the perfect grab-and-go snack!


What you'll need:

•1/3 cup extra-virgin olive oil 

•1/2 cup honey 

•2 eggs (or flax eggs) 

•2 large ripe bananas (mashed) 

•1/4 milk (of choice) or water 

•1 tsp baking soda 

•1 tsp vanilla extract 

•1/2 tsp salt 

•1/2 tsp ground cinnamon 

• 1 3/4 cups whole wheat flour 

• Optional: 1/2 cup mini dark chocolate chips 


What you'll need to do:

1. Preheat oven to 325 F and grease a muffin tin. 

2. Whisk the oil and honey together and then add the eggs, mashed bananas and milk. Mix until combined.  

3. Add the baking soda, vanilla, salt and cinnamon and whisk together. 

4. Using a large spoon, stir in flour until combined. Add your chocolate chips. 

5. Divide batter into 12 muffin tins and add more chips on top. 

6. Bake for 25 minutes or until edges are browned and the top of the muffins are springy to the touch. Remove from oven and let cool before storing in a freezer bag to be frozen.
